So why did I turn quesadillas into mini "envelopes"? Because I wanted to make a big batch of bite-size quesadillas to feed a crowd and this was the perfect solution. And, these are oven-baked, so you simply fill a baking pan with mini quesadillas and bake them all at once.
Want to prep ahead? Sure thing! Assemble the quesadillas and refrigerate them for up to 24 hours before baking.
Cheesy Quesadilla Envelopes
6 soft flour tortillas (fajita size works best), cut into 4 wedges each
1 tablespoon taco seasoning, or more if desired
1 cup shredded cheddar cheese or Mexican cheese blend
Cooking spray
Kosher salt
Salsa or picante sauce for dunking
Preheat the oven to 350 degrees. Line a baking pan with parchment paper or foil.
Place the tortilla wedges on a flat surface and sprinkle them all with the taco seasoning. Use your fingers to spread the seasoning all over each tortilla wedge. Sprinkle the cheese over top, about 2 teaspoons cheese per wedge.
Fold up the "point" to the middle and then fold in the sides. Place the quesadillas upside-down on the prepared pan (this ensures they stay closed).
Spray with cooking spray and season with salt.
Bake for 10 minutes, until golden brown.
Serve with salsa on the side for dunking.
