Can you believe these decadent little chocolate cakes are dairy and egg free? And, for fun, I decided to use apple cider instead of water. Wow, what a great flavor combination! You can't detect the cider flavor, there's just more depth to the cake. I think these are awesome!
Triple Chocolate Cake Bites
Cooking spray
1 1/2 cups all-purpose flour
1 cup light brown sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup apple cider
5 tablespoons melted coconut oil
1 teaspoon vanilla extract
White chocolate chips (choose vegan chips if desired)
Semi-sweet chocolate chips (choose vegan chips if desired)
Preheat the oven to 350 degrees. Coat 2-3 mini muffin pans with cooking spray.
In a large bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. Mix to combine, breaking up the larger bits of brown sugar if necessary. Add the cider, coconut oil and vanilla and whisk to combine. If the mixture is lumpy (from the brown sugar), microwave for 30 seconds and whisk until the lumps are gone.
Spoon the batter into the prepared muffin pans, with each cup 3/4 full. You will get 24-28 cake bites. Sprinkle a few chips over each cake - I used 3 white chocolate chips and 2 dark chocolate chips for each cake bite.
Bake for 12 to 15 minutes, until a wooden pick comes out clean.
Cool on a wire rack for a few minutes before serving.
