At first, these noodles were meant to be a side dish, but WOW! The tender noodles, golden and crunchy bok choy, and delicate, citrusy ponzu sauce easily stole the show! To make this a main dish with added protein, top the noodles with grilled chicken, steak, shrimp, or tofu.
This recipe comes together incredibly fast thanks to the pre-cooked stir-fry noodles. I buy them in the regular grocery aisle with the other Asian ingredients. You can also find them in the refrigerated section of many stores.
Stir-Fry Noodles with
Ponzu and Bok Choy
1 tablespoon peanut oil
1 head bok choy, chopped (green and white parts)
1 tablespoon sugar
1/3 cup ponzu sauce (a blend of Japanese soy sauce and
citrus – typically lemon and orange)
1 tablespoon water
14 ounces cooked stir-fry noodles (these are pre-cooked, so
they just need 2 minutes in a hot pan)
2 tablespoons chopped fresh scallions, optional
Heat the oil in a large skillet or wok over medium heat. Add
the bok choy and sugar and cook for 3 minutes, until the bok choy is tender and
golden. Add the ponzu sauce and water and bring to a simmer. Add the noodles
and cook for 2 minutes to heat through, stirring frequently. Remove the pan from
the heat and, if using, top with scallions before serving.
