It'll take you longer to say the name of this amazing dish than it will for you to actually make it! My boys love mashed potatoes, and I don't waiver very much when it comes to the ingredients. They like what they like. But, in this case, I chose Yukon gold potatoes for their creaminess, and added a hint of ranch and sundried tomato. Just enough to catapult the potatoes, without wiping them out!
Smashed Yukon Gold Potatoes with Ranch and Sundried Tomato
1 pound Yukon gold potatoes, peeled or unpeeled and cut into 2-inch chunks
1/4 cup milk
2 tablespoons butter
2 tablespoons ranch dip mix
2 teaspoons sundried tomato paste
Salt and ground black pepper
Place the potatoes in a medium saucepan and pour over enough water to cover by about 2 inches. Bring the water to a boil. Boil for 10 minutes, until the potatoes are fork-tender. Drain and return the potatoes to the pot. Add the milk, butter, ranch dip, and sundried tomato paste and smash until you reach your desired level of smashed-ness (smooth or chunky).
Season to taste with salt and pepper.
