Skillet Roasted Potatoes with Smoked Sea Salt

This is such a simple recipe, but the flavors are more complex because I used my cast iron skillet (seasoned by years of use) and seasoned the potatoes with sea salt that was hickory smoked. You should be able to find many different varieties of sea salt at your favorite grocery store, so grab whatever speaks to you. 

And, the combination of butter and olive oil adds another unique layer of flavor. 

Note: If you don't have a cast iron skillet, roast the potatoes in any oven-proof skillet or shallow roasting pan. 

Skillet Roasted Potatoes with Smoked Sea Salt

1 tablespoon olive oil
1 tablespoon butter
1-1 1/4 pounds Russet potatoes, peeled and cut into 2-inch pieces
1 teaspoon sea salt, smoked or another variety
1/2 teaspoon freshly ground black pepper
Chopped fresh parsley

Preheat the oven to 425 degrees. 
Combine the oil and butter in your favorite oven-proof skillet or roasting pan. Place the pan in the oven just long enough to melt the butter. 
Add the potatoes to the pan and stir to coat. Season with the salt and pepper and stir to coat. 
Roast for 30 minutes, until the potatoes are golden brown and tender, stirring once during cooking.
Sprinkle with parsley before serving.
