Load up that sheet pan and let the nacho-making begin! These nachos couldn't be easier to
make, and get this - the corn chips are BAKED, so this crunchy, beefy, cheesy, heavenly landscape of joy is healthy too!
Healthy is great, but what I love most: Everything is made on one sheet pan, so you can go from the oven to the table (with a little help from the skillet for the beef mixture). Your family and friends will love these - and if you're serving a BIG crowd, make a few sheet pans-worth of nachos.
About the tortillas: For this recipe, I used corn tortillas but you can use flour tortillas, or combination of flour and corn.
About the adobo seasoning: I used adobo seasoning on both the chips and in the beef mixture. Adobo is a blend of garlic, oregano and other seasonings and it adds great flavor to all types of dishes. You can find it next to the other Mexican ingredients in the grocery store. You can also use taco seasoning if you want.
Sheet Pan Beefy Nachos
1 package soft corn tortillas, cut into 4 wedges each
Cooking
spray
Adobo seasoning, 1/2 teaspoon for sprinkling over chips and 1 teaspoon for the beef
mixture
1/2 pound
lean ground beef
1 teaspoon
chili powder
1 teaspoon
oregano
1/2
teaspoon cumin
1/2
teaspoon salt
1/4
teaspoon ground black pepper
15-ounce
can chili beans or seasoned black beans
1/2 cup
shredded Mexican cheese blend
Optional
toppings:
Black
olives
Cilantro
Sliced
jalapeno peppers (fresh or pickled)
Sour cream
Guacamole
Salsa
Preheat the oven to 400 degrees. Arrange the corn tortillas on a large, parchment-lined baking sheet, overlapping the chips as necessary. Spray the tortillas with the cooking spray and sprinkle them with 1/2 teaspoon of the adobo seasoning.
Bake for 10
minutes, until golden brown and crisp.
Meanwhile,
brown the beef in a large skillet over medium-high heat. Add the chili powder,
oregano, 1 teaspoon of adobo seasoning, cumin, salt, and pepper. Stir to coat. Add the chili
beans (with the sauce from the can) and bring to a simmer. Reduce the heat to
low and simmer for 10 minutes.
Spoon the
beef mixture over the chips. Top with the cheese. Return the pan to the oven
and bake for 5 minutes, until the cheese melts.
Serve with
additional toppings.
