Pretzel Rolls with Pesto and Mozzarella

Aren't pretzel rolls awesome? I'm so happy they were invented. And, they can be used in so many different applications, beyond a great sandwich. Here. I simply coated them with pesto, sprinkled them with mozzarella and baked for a few minutes. Talk about an amazing, last minute side dish. They also make a GREAT addition to your school or work lunchbox! 

Pretzel Rolls with Pesto and Mozzarella

2-4 pretzel rolls, this really depends on the size of the rolls, the ones I bought were fairly large, like huge kaiser rolls
1/3 cup prepared pesto, I prefer the refrigerated variety
1/2 cup shredded mozzarella cheese

Preheat the oven to 400 degrees.

Slice the pretzel rolls into 1/2-inch thick slices. Spread a small amount of pesto on each slice and transfer the slices to a baking pan.
Top with the mozzarella cheese. 
Bake for 8 to 10 minutes, until the cheese is golden brown and bubbly. 
Serves 4
