Ok, these are downright awesome. Chewy and chocolate-y with hints of marshmallow and vanilla. You need ONE bowl and a microwave and they're ready to chill. I don't know why I didn't think of this before. And for those of you worried about raw flour, fear not. I used crushed vanilla wafer cookies. Not only do they add great vanilla flavor (and eliminate the need for vanilla extract), they grind into an almost flour-like consistency.
That said, since the vanilla wafer cookies need to be in fine crumbs, you can either whirl them in a food processor, or put them in a freezer bag and smash them with a rolling pin. Feels good either way.
No Bake Brownies with Marshmallows and Vanilla Wafers!
Cooking spray
8 ounces marshmallows (half of one 16-ounce bag)
1 tablespoon water
1 cup powdered sugar
2 tablespoons unsweetened cocoa
3 cups vanilla wafer cookies, processed into fine crumbs
1 cup semi-sweet chocolate chips, plus more for sprinkling over top
2 tablespoons heavy cream
Line an 8-inch square baking pan with foil, allowing the foil to hang over the ends. Spray the foil with cooking spray.
Place the marshmallows and water in a large, microwave-safe bowl. Microwave, 30 seconds at a time, until marshmallows are melted. Stir after every 30 seconds (it should only take about 90-120 seconds total).
Fold in the powdered sugar and cocoa. Mixture will be sticky. Fold in the cookie crumbs and chocolate chips. Mixture will still be sticky! Fold in the heavy cream. Mixture will be a little less sticky! If you're having trouble, use your hands! It's fun!
Here's what it looks like:
Press the mixture into the prepared pan - using water-moistened hands helps.
Here's what it will look like:
Sprinkle more chocolate chips over top and press them in gently. It'll look like this:
Refrigerate until firm (about 1 hour).
Cut into squares and serve!
