Why meatballs, you ask? Because maybe you don't have steak on hand? Or maybe you want to try something other than chicken, or plain cheese? For me, I happened to have 1/2 pound of lean ground beef in the fridge, and I wanted to try something fun and different. My boys both took their first bites and said (almost in unison), "Wow, this is good". And they taste a lot of things, so that's a big deal.
The best part? You need just a few ingredients!
Meatball Quesadillas
1/2 pound lean ground beef
2 tablespoons taco seasoning
4 flour tortillas (fajita size)
1 1/3 cups shredded Mexican cheese blend, or more if desired
Cooking spray
Optional sides:
Salsa
Guacamole
Sour cream
Hot sauce
Preheat the oven to 400 degrees. Line a baking pan with parchment paper.
In a medium bowl, combine the beef and taco seasoning. Mix well. Shape the mixture into 16 little meatballs and place the meatballs on the prepared baking pan. Bake for 20 minutes, until browned and cooked through.
Arrange the tortillas on a flat surface. Top one half of each tortilla with 1/3 cup of the cheese. When the meatballs are cool enough to handle, cut them in half. Arrange 8 halves on the cheese of each tortilla. Like this:
Fold over to cover the filling.
Coat a griddle or large skillet with cooking spray and preheat to medium. Arrange the quesadillas on the hot pan and spray the surface with cooking spray. Cook for 3 to 4 minutes per side, until the cheese melts.
Slice each quesadilla in half and serve with desired sides.
