Let's face it, paninis are the ultimate grilled cheese sandwiches. But not all of us have a panini press hanging out on our kitchen counter. No problem. You can use a stove-top grill pan or griddle and get the same result.
Ham and Cheddar Paninis
Cooking spray
4 slices bread, any variety
4 ounces sharp cheddar cheese
4 ounces ham (I used black forest ham)
Coat a stove-top griddle or grill pan with cooking spray and preheat to medium-high. Arrange 2 slices of bread on the hot pan. Top with half of the cheese, all of the ham, and the rest of the cheese (cheese on both sides holds the sandwich together). It will look like this:
Top each sandwich with a second slice of bread. Place a heavy skillet on top and weigh the skillet down with a can. Like this:
Cook until the bottom is golden, flip and do the same on the other side. Cook until golden and the cheese melts.
Enjoy!
