Easy Baked BBQ Boneless Short Ribs

You don't often see the terms "easy" and "ribs" in the same title. So why is this recipe easy? First, because the beef short ribs are boneless and easy to work with. And second, because the oven does all the work. The quick barbecue sauce is made with pantry staples too - so you can pull this together in a snap. 

Note: I made this recipe with 2 pounds of boneless short ribs because I was just cooking for the 3 of us (the recipe serves 4). That may seem like a lot, but ribs shrink a lot. That said, you can easily double the recipe to serve more. 


Easy Baked BBQ Boneless Short Ribs


2 pounds boneless beef short ribs

Salt and freshly ground black pepper
3/4 cup ketchup
1 tablespoon brown sugar
2 teaspoons cider vinegar
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon chili powder
1/4 teaspoon garlic powder

Preheat the oven to 300 degrees. 

Season the ribs all over with salt and pepper and place in a shallow baking dish. 
In a small bowl, whisk together the remaining ingredients. 
Spoon all but 2 tablespoons of the ketchup mixture over the ribs. Turn to coat the ribs on both sides. Cover the pan with foil and bake for 2 1/2 hours. Uncover and, if necessary, spoon out any liquid from the bottom of the pan and discard it. Spoon the remaining ketchup mixture over the ribs and return them to the oven, uncovered, for 30 minutes, until the top is browned.
