Cookie Butter Waffles

My boys love waffles on the weekends. And, I typically make chocolate chip waffles , or peanut butter-spike waffles with maple syrup. This time, I wanted to try adding cookie butter (remember when I made fluffy cookie butter dip for star fruit?). 

These are crazy good. The hint of spice cookie in the waffle batter partners perfectly with maple syrup.

You'll notice that I didn't add any butter, sugar and salt to the waffle batter. That's because the cookie butter has all three, so it adds flavor and eliminates extra ingredients. I like when that happens. 

Cookie Butter Waffles

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups milk
1 large egg
1/4 cup cookie butter
1 teaspoon vanilla extract
Cooking spray

In a large bowl, combine the flour, baking powder and baking soda. In a separate bowl, whisk together the milk, egg, cookie butter, and vanilla. Add the wet ingredients to the dry ingredients and mix until blended. 
Coat a waffle iron with cooking spray and preheat. Add the batter to the hot waffle iron (follow the manufacturer's instructions for amount of batter per waffle) and cook until steam starts to escape. Serve immediately with maple syrup, or keep warm in a 200 degree oven until ready to serve.
