Buttermilk-Ranch Mashed Potatoes

My boys adore mashed potatoes, especially when they have hints of buttermilk and ranch dip. This side dish is super easy to make, so it's an excellent choice for a busy weeknight. 

Buttermilk-Ranch Mashed Potatoes

1 pound Russet potatoes, peeled and cut into 2-inch pieces
1/2 cup buttermilk, plus more if needed 
1 tablespoon butter
1 tablespoon powdered ranch dip/salad dressing mix
Salt and freshly ground black pepper

Place the potatoes in a medium saucepan and pour over enough cold water to cover by 2 inches. Place the pan over high heat and bring to a boil. Boil for 10 to 12 minutes, until the potatoes are fork-tender. Drain and return the potatoes to the pan. Add the buttermilk, butter, and ranch mix and mash until smooth (or chunky, depending on how you like your mashed potatoes), adding more buttermilk if necessary. 

Season to taste with salt and pepper.
