The truth behind this recipe: Today, I wanted to create an after-school snack I could bring in the car so the boys could pop something in their mouths with ease (while getting protein, calcium, etc...). They're starving after school so it's a great opportunity to load them up with nutrients.
Even though I served these gems at 2 PM, they would be a great appetizer for cocktail and dinner parties! Just double or triple the recipe to serve more people.
BBQ Chicken Pizza Cups
Note: I baked one chicken breast half for this recipe, but you can use leftover chicken, rotisserie chicken, or pre-cooked chicken from the grocery store. You need about 1 cup diced chicken.
1 boneless, skinless chicken breast half, about 4 ounces
Salt and ground black pepper
2-3 tablespoons barbecue sauce
1 package mini fillo shells (box contains 15 shells)
2 ounces mozzarella cheese (I used whole milk mozzarella cheese because I think it melts the best), cut into 15 equal pieces
Preheat the oven to 400 degrees.
Place the chicken on a foil- or parchment-lined baking sheet and season with salt and pepper. Roast for 20-25 minutes, until cooked through. Remove the chicken from the oven and reduce the oven temperature to 350 degrees.
When the chicken is cool enough to handle, cut it into small pieces (about 1/2-inch dice).
Add the barbecue sauce to the chicken and stir to coat (add as much as you like).
Arrange the fillo shells on a baking sheet and fill with the chicken mixture. Top the chicken with the mozzarella.
Makes 15 mini cups
