Banana-Chocolate Chip Poke Muffins

Why are cakes the only poked baked goods? And, have you ever had a slice of poke cake where you don't get the FULL amount of filling? It's like half a poke. 

That's what makes these muffins so awesome! Each banana muffin gets a full poke! Plus mini chocolate chips to get the party really started. 

Banana-Chocolate Chip Poke Muffins

Cooking spray
4 overripe bananas
1/4 cup milk
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup mini semi-sweet chocolate chips
2 (snack-size) chocolate fudge puddings

Preheat the oven to 350 degrees. Coat a 12-cup muffin pan with cooking spray.
In a food processor or mixing bowl, combine the bananas, milk, egg, and vanilla. Process until blended and smooth. Add the flour, sugar, baking powder, baking soda, and salt and process until blended. Fold in the chocolate chips. 
Spoon the batter into the prepared pan, so each cup is 2/3 full. Bake for 15 to 20 minutes, until a wooden pick comes out with little bits clinging to it. 
Cool on a wire rack.
Using the end of a wooden spatula, poke a hole into the center of each muffin, almost through to the bottom. 
Spoon the pudding into a piping bag or freezer bag with one corner snipped. 
Pipe the pudding into the holes in the muffins.
