Mini Meatball Subs!

Check out these gems! Made with frozen dinner rolls, these bite size (actually TWO bites each) are super easy to make and are incredibly fun to serve. You can serve them as appetizers to a crowd, or as the main dish for dinner! 

Note: I used frozen dinner rolls for these subs, but you could use the refrigerated variety too. 

Mini Meatball Subs

12 frozen dinner rolls, thawed according to package directions (for me, that was 2 hours on the counter)
1/2 pound lean ground beef
1/4 cup Italian-style seasoned bread crumbs
3 tablespoons grated parmesan cheese
1 tablespoon ketchup
1 large egg
1 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2/3 cup shredded mozzarella cheese
Olive oil
Pasta sauce for dipping, warmed in a saucepan or the microwave

Preheat the oven to 400 degrees. 
In a bowl, combine the beef, bread crumbs, parmesan cheese, ketchup, egg, oregano, onion powder, garlic powder, salt, and pepper. Mix well and shape the mixture into 12 meatballs. Place the meatballs on a baking pan (I like to line my pan with parchment paper for easy clean-up). Bake for 15 to 20 minutes, until cooked through. Reduce the oven temperature to 350 degrees. 
Press each dinner roll out until about 1/4-inch thick (make sure it's wider than your meatballs!). Top with about 2 teaspoons of the mozzarella cheese. Top each roll with one meatball. Pull up the sides of the rolls to cover the meatballs and pinch the top together to seal. 
Place the rolls on a parchment-lined baking sheet, seam-side down, and brush the tops and sides with the olive oil. 
Bake for 15 to 20 minutes, until the rolls are golden brown. 
Serve with the warm pasta sauce. 

Serves 6-12 as an appetizer and 4 as a main dish
