Espresso-Glazed Steak with Smoked Paprika and Chipotle


What an amazing flavor combination. The espresso adds a quality to the steak where you think, "What IS that flavor?", without dominating the meat. I also added smoked paprika and chipotle chile powder - which completely take the steak over the top. This is super simple to prepare, you could seriously make it ANY day of the week.

Espresso-Glazed Steak with Smoked Paprika and Chipotle

Cooking spray
4 lean steaks, filet or sirloin, or your favorite cut
1/2 cup brewed espresso or strong coffee
1/2 teaspoon smoked paprika
1/2 teaspoon chipotle chile powder
Salt and freshly ground black pepper

Coat a stove-top grill pan with cooking spray and preheat to medium-high. 
In a small bowl, combine the espresso, paprika and chile powder. Whisk to combine. Brush the mixture all over one side of the steaks and season that side with salt and pepper. 
Place the steaks on the hot grill pan, seasoned side down, and season the top with the espresso mixture, salt and pepper. Cook and flip, brushing with the espresso mixture EVERY flip, for 2 to 3 minutes per side (continuously flipping every minute or so), for medium-rare meat. Remember, steaks continue to cook after you remove them from the heat, so stop cooking a little early. You should be out of the espresso mixture at this point. 
Let the steaks rest for 5 minutes before serving.
