Chocolate Marshmallow Filo Fingers

Need a last minute dessert? How about 1 with three ingredients (4 if you count colored sugar sprinkles...). I invented this dessert at the last minute, when I was looking for something fun for my boys. A few sheets of filo dough later... we had dessert! Check it out: 

Chocolate Marshmallow Filo Fingers

4 sheets filo dough, thawed according to the package directions
Cooking spray, preferably butter flavored
Semi-sweet chocolate chips, about 1/2 cup (max)
Mini marshmallows, about 1 cup
Granulated sugar or colored sugar sprinkles 

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Unroll 1 sheet of filo on a flat surface (keep the other sheets covered so they don't dry out). Spray the sheet with cooking spray. Fold in half lengthwise, and spray the top. Use a sharp knife or pizza cutter to cut out 4 equal rectangles. 
Line up the chocolate chips and marshmallows on one end of the rectangles. Here's what it will look like: 
Roll up tightly and transfer to the prepared pan. Spray the tops with cooking spray and sprinkle with sugar or colored sugar. Here's what it will look like:
 Bake for 15 minutes, until golden brown. Like this:
