Chocolate Chip Blondies with M&M's

How pretty are these? And, even though I adore cooking, there are few things better than a ONE BOWL DESSERT!

Chocolate Chip Blondies with M&M's

Cooking spray
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter (12 tablespoons or 1 1/2 sticks)
1 1/4 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup semi-sweet chocolate chips
1/3 cup M&M's

Preheat the oven to 350 degrees. Coat a 9-inch square baking pan with cooking spray. Line the pan with parchment paper and spray the parchment paper with cooking spray. Set aside.
In a small bowl, combine the flour, baking powder and salt. Mix well with a fork and set aside.
Melt the butter in the microwave or small saucepan over low heat. Whisk in the brown sugar until blended and smooth (if you melt the butter in a saucepan, remove the pan from the heat before adding the sugar and transfer the mixture to a bowl before adding the rest of the ingredients).
Let the butter-sugar mixture cool for a few minutes. Whisk in the eggs and vanilla. Whisk in the flour mixture. Fold in the chocolate chips.
Spoon the mixture into the prepared pan and sprinkle the M&M's over top.
Bake for 24-28 minutes, until the top cracks slightly and a wooden pick comes out with moist bits clinging to it. Here's the batch after 10 minutes...
How much do you want to dive into that pan?!

Cool the pan on a wire rack before cutting into squares.

Makes 16 blondies
