Chocolate Banana Mug Cakes with White Chocolate

Whenever you need a quick dessert - grab a mug! It's actually kind of a joke in my house: "Mom, did you make dessert?... how about a mug cake?" I love making mug cakes because you can make just what you need and cleanup is a breeze. And this version is super healthy because the banana replaces almost ALL of the fat, and keeps the cake moist. In fact, this cake is so moist, it's almost like a "lava" cake, where the center is almost undercooked.

This recipe makes 2 mug cakes, so if you need more, simply double or triple the recipe.

Note: I topped my mug cakes with grated white chocolate, but sifted powdered sugar works too.

Chocolate Banana Mug Cakes with White Chocolate

1 ripe banana (over-ripe works too)
1 large egg
1/4 cup milk or buttermilk
2 teaspoons vegetable oil
1/2 teaspoon vanilla
1/2 cup all-purpose flour
1/2 cup granulated sugar
6 tablespoons unsweetened cocoa
1/2 teaspoon baking soda
Pinch of salt
Topping: 
Shaved or grated white chocolate

In a food processor, combine the banana, egg, buttermilk, oil, and vanilla. Process until smooth. Add the remaining ingredients (except for the white chocolate) and process until blended and smooth.
Spoon the batter into 2 mugs. Microwave on HIGH for 90 seconds. Top with grated white chocolate and serve.
