Baked Chicken Burritos with Rice and Beans

These are skinny burritos too! The filling is a savory blend of roasted chicken, seasoned rice and canned beans (I used white beans, but any beans will do). I put cheese on the top only, which eliminates calories and fat -- but if you're not cutting back -- add cheese to the filling too. I served these with salsa and hot sauce on the side. 

Baked Chicken Burritos with Rice and Beans

Cooking spray
2 boneless skinless chicken breast halves (about 4-5 ounces each) - I actually used ONE, huge chicken breast half that was 10 ounces!
Salt and freshly ground black pepper
1/2 cup white rice
1 tablespoon unsalted butter
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup water
15-ounce can white beans, rinsed and drained
6-8 flour fajita-size tortillas (you can make 6 FAT tortillas or 8 skinnier ones)
Hot sauce
1/2 cup shredded cheddar cheese (or Mexican cheese blend, or pepper jack...)

Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray. Coat a shallow baking dish with cooking spray. 
Arrange the chicken on the prepared baking sheet. Season the top with salt and pepper. Bake for 20 to 25 minutes, until the chicken is golden brown and cooked through. Reduce the oven temperature to 350 degrees. 
When the chicken is cool enough to handle. shred the meat with two forks. 
Meanwhile, in a small saucepan, combine the rice, butter, chili powder, oregano, cumin, onion powder, garlic powder, salt, and pepper. Add the water and set the pan over high heat. Bring to a boil. Reduce the heat to low, cover and cook for 15 to 20 minutes, until the liquid is absorbed. Fold in the beans. 
Arrange the tortillas on a flat surface. Place the rice mixture down the center of each tortilla. Top with the chicken. Roll up the tortillas and place them side-by-side in the prepared baking dish. Drizzle hot sauce over top and then top with cheese. 
Cover with foil and bake for 20 minutes. Uncover and bake for 10 more minutes.
