Oreo Cookie Pops!

I adore cake pops. And I worship Oreos. Now, can you see why I created these pops? I took a few ingredients and turned them into these dreamy, hand-held treats. Tender on the inside, crisp chocolate on the outside... the experience is pure bliss. I chose to use icing in the filling, but you can certainly use cream cheese for a more "cake-like" experience. 

Whether you make them for your kids, your friends, or as teacher or hostess gifts, I think you'll agree: they're amazingly easy to make and unbelievably delicious. 

Note: You can make these pops up to 1 week in advance. Store in an airtight container in the refrigerator.

Oreo Cookie Pops

18 Oreo cookies (regular or flavored filling)
4 tablespoons icing or cream cheese
2 cups semi-sweet chocolate chips
1/4 cup white chocolate chips
Sprinkles


Put the Oreo cookies in a food processor. 


Process until finely ground.


Add the icing and process until the mixture comes together. 


You'll know the filling is ready if you can shape the mixture into balls (with a little squeeze).


Shape the mixture into 10-12 balls and insert a cake pop stick into each one. Refrigerate for 1 hour. 


Melt the semi-sweet chocolate in the microwave, checking and stirring every 30 seconds. Remove each cake pop stick from the balls, dunk in the melted chocolate, and then return to the balls. 


Let the chocolate harden (it only takes a minute and it prevents the stick from falling out when you dunk the whole ball). 


Dunk the balls in the melted chocolate and turn to coat. When using sprinkles, add them now, before the chocolate hardens. 


Melt the white chocolate in the microwave, checking and stirring every 20 seconds. Use a fork to drizzle the white chocolate over the cooled dark chocolate balls. 


Cool until set and enjoy!!!!
