Oatmeal Cookie Cups!


I have no idea what made me think of this. Maybe because I "like" oatmeal cookies, but I also think they need a little "something". Now this is something! Think about how much fun you can have filling them with whatever you want!

Oatmeal Cookie Cups

1 cup all-purpose flour
1 cup oats (I used steel-cut but you can use regular or instant)
1/2 cup granulated sugar
1/4 cup light brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 cup (1 stick) unsalted butter
2-3 tablespoons cold water

Preheat the oven to 350 degrees. Line 2 mini muffin pans with paper liners (cooking spray isn't enough - the cookies will stick). 



In a food processor, combine the flour, oats, both sugars, cinnamon, vanilla, and baking soda. Process until blended. 


Add the butter and process until mixture resembles coarse crumbs. 


Add 2 tablespoons of the water and pulse on and off until the mixture comes together, adding the last tablespoon of water if necessary. 


Press the mixture into the muffin pans, making little cups.


Bake for 12-15 minutes, until golden brown (I took this picture 10 minutes into baking to show you that they will puff up, but don't worry!). 


See?! They settle down again! Cool completely on a wire rack before filling.




Fill with whatever you want - I chose candy, Nutella and butterscotch pudding with chocolate shavings, but you could fill with mousse, whipped cream, whatever!!
