The perfect combination of chocolate and mint! Oh, and you will LOVE the hint of graham crackers in the crust too!
No Bake Mint Chocolate Chip Bars with Chocolate-Graham Crust
For the crust:
1/2 cup unsalted butter (1 stick)
1/3 cup unsweetened cocoa
1/4 cup granulated sugar
1 large egg
1 1/2 cups graham cracker crumbs
1 teaspoon vanilla extract
For the filling:
1/4 cup unsalted butter (1/2 stick), softened
2 cups powdered sugar
3 tablespoons milk or water
1/2 teaspoon mint extract
2-3 drips mint food coloring
1/4 cup mini semi sweet chocolate chips
For the topping:
Piece of dark chocolate for shaving over top
To make the crust, in a microwave-safe bowl, combine the butter, cocoa and sugar.
Microwave on high for 45 seconds. Stir and microwave for 30 more seconds. Stir until the mixture is completely melted. Whisk in the egg. Whisk until the mixture is smooth, shiny and thick. Fold in the graham cracker crumbs and vanilla. Press the mixture into an 8-inch square pan that's been lined with foil. Set aside. To make the filling, whip the butter until it's soft. Beat in the powdered sugar and milk. Beat until mixture reaches an icing-like consistency. Beat in the mint extract and food coloring. Fold in the chocolate chips. Spread the mixture over the crust.
Refrigerate until firm (1-2 hours).
Top with shaved chocolate and cut into 16 bars. Store leftovers in an airtight container.
