Chocolate Chip-Chocolate Pretzel Bars


The boys and I loved the mint chocolate chip bars so much, I decided to try a variation of the same recipe. Here's what I did to change things: 

  • Instead of graham cracker crumbs I used crushed pretzels
  • Instead of mint extract, I used vanilla 
  • Instead of shaving chocolate over top, Luke suggested I melt white chocolate. Smart boy! 
  • I added red and green food coloring to make festive swirls on the top 

These are awesome! 

Chocolate Chip-Chocolate Pretzel Bars

Base layer: 
1/2 cup (1 stick) unsalted butter
1/3 cup unsweetened cocoa
1/4 cup granulated sugar
1 large egg
1 1/2 cups pretzel pieces and crumbs (crush them in a freezer bag with a rolling pin)
Filling layer: 
1/4 cup (1/2 stick) unsalted butter, softened
2 cups powdered sugar
3 tablespoons milk
1/2 teaspoon vanilla extract
1/4 cup mini semi-sweet chocolate chips
Top layer: 
1/2 cup white chocolate chips, pieces or melting discs
Red and green food coloring


To make the base layer, in a large bowl, combine the butter, cocoa and sugar. Microwave for 30 seconds. Stir and microwave for another 30 seconds. 


Stir until completely melted and smooth.


Whisk in the egg until smooth and thick.


Fold in the pretzels.


Press the mixture into a foil-lined square baking pan. Set aside.


To make the filling, beat the butter until smooth and creamy. Beat in the powdered sugar and milk until you reach an icing-like consistency. Beat in the vanilla. 


Fold in the chocolate chips. 


Spread the mixture over the base layer.


Melt the white chocolate in the microwave, checking and stirring every 30 seconds. 


Spread the white chocolate over the filling.


Dot the top of the bars with the food coloring. 


Use a skewer to swirl the colors on the top (don't worry if you reach the filling layer, just try to stay on the surface). 


Refrigerate until firm (about 1 hour) before cutting into bars!
