Bocconcini Stuffed Dinner Rolls with Garlic and Parmesan

You MUST add this to your holiday menu! Simplest recipe ever and it transforms average dinner rolls into something truly stellar. 

Note #1: I buy frozen dinner rolls for this - and keep what I don't use in the freezer for future recipes. 
Note #2: Bocconcini are small balls of fresh mozzarella cheese. They're typically sold with the specialty cheeses; often near the deli in the grocery store. 

Ingredients
Dinner rolls (as many as you need), thawed in the refrigerator (this prevents excess rising)
Bocconcini (as many as the dinner rolls you have)
Garlic powder
Grated Parmesan cheese

Preheat the oven to 350 degrees. 


Arrange the dinner rolls on the counter. Pat the bocconcini dry. 


Press one bocconcini into the center of each roll. 


Wrap the dough around the cheese and pinch it together to seal. 


Transfer the rolls to a lined baking pan and brush with olive oil. 


Sprinkle with the garlic powder and Parmesan cheese. 


Bake for 15 to 20 minutes, until puffed up and golden brown. 

Makes as many rolls as you need - from 1 to 101!
