How cute are these? My boys love individual meatloaves, and I like to surprise them with something hidden in the center. Lately, they've been loving cheddar cheese curd (my older son says it tastes like a "gourmet cheese stick"), so I decided to nestled that in the middle. You can clearly see how it bubbled out the top, so it wasn't really a surprise, but they loved it anyway!
You can use any cheese you want - cheddar, mozzarella, pepper jack, blue cheese - the possibilities are endless.
Mini Meatloaves with Curd Cheese Surprise
Here's what you need:
1 pound lean ground beef
1/4 cup seasoned bread crumbs
4 tablespoons grated parmesan cheese
1 large egg
3 tablespoons ketchup, divided
6 pieces of cheese curd or any cheese
Salt and freshly ground black pepper
Combine everything but 2 tablespoons of the ketchup in a large bowl. Mix until blended and press into 6 cups of a muffin pan.
Press one piece of cheese into the center of each mini meatloaf. Then cover the cheese with the meat mixture.
Spread the remaining 2 tablespoons of ketchup over the top. Bake at 375 degrees for 25 to 30 minutes, until the meatloaves have pulled away from the sides of the muffin cups. Cool for 5 minutes, in the pan, before serving.
Enjoy! Serves 4-6
