Mahi Mahi Mango Sandwich

I used a little shortcut here: Caribbean citrus seasoning, a blend of sweet peppers, chili, allspice, nutmeg, ginger, cinnamon, lime, and other seasonings. Imagine if you had to pull ALL those ingredients out of your pantry. See why I cheated a little?

And, there’s not really a suitable substitute if you’re just looking for one spice (because the medley is so complex). Look for the seasoning blend in the spice aisle next to the other seasoning blends.

This is an excellent, light sandwich for a busy weeknight or lazy weekend. Mahi mahi is a firm-fleshed white fish that holds up well to strong flavors. It also partners beautifully with the sweet mango in this awesome hand-held feast...

Mahi Mahi Mango Sandwich

Cooking spray
4 mahi mahi fillets (about 5 ounces each)
1/4 cup light mayonnaise
1 tablespoon Caribbean citrus seasoning (preferably salt-free)
4 long sandwich rolls
1 mango, peeled, seeded and thinly sliced

Preheat the oven to 375ºF.  Coat a baking sheet with cooking spray.
Season the mahi mahi all over with salt and freshly ground black pepper.  Place the mahi mahi on the prepared pan and bake for 12 to 15 minutes, until the fish is fork-tender.
Meanwhile, whisk together the mayonnaise and Caribbean seasoning.  Spread the mayonnaise mixture on the rolls and top with mahi mahi and mango.
