Egg and Cheese Panini with Creamy Ketchup

This quick and easy sandwich makes the ideal breakfast or lunch treat - you need just a handful of ingredients and it's super satisfying. Use whatever cheese you have on hand and, for added flavor on the bread, rub a halved garlic glove over the toasted bread just before serving. 

Egg and Cheese Panini with Creamy Ketchup

1 teaspoon olive oil, plus more for brushing the bread
1 large egg
Salt and freshly ground black pepper
2 slices Swiss cheese (or any cheese you have on hand)
2 slices artisan bread (I prefer sourdough for this - it lends a wonderful tanginess)
2 tablespoons ketchup
1 tablespoon mayonnaise

Heat the oil in a small skillet over medium heat. Add the egg and cook until the white is completely cooked (cook the yolk as long as you want - runny or firm). Season with salt and pepper. 
Brush one side of the bread slices (the outside of the sandwich) with olive oil. Flip and arrange on a flat surface. Top one slice with 1 slice of cheese, then the cooked egg, then the other slice of cheese. Place the second slice of bread on top - olive oil side up. 
Transfer the sandwich to a preheated panini press or hot skillet (preheat to medium-high). Press the sandwich or weigh down with another heavy skillet. Cook until golden brown and cheese melts. 
Meanwhile, combine the ketchup and mayonnaise. 
Serve the sandwich with the creamy ketchup on the side.
