Blue Cheese Burgers with Brown Sugar Bacon and Chipotle Ketchup

Sometimes the day just calls for a burger. A juicy beef burger with all the fixings. You might be thinking, "Why do I need a recipe for a burger?". Here's why:

1. I add brown sugar to the bacon that's nestled on the burger.
2. I infuse the ketchup with chipotle chilies in adobo sauce.
3. I added a little blue cheese to the beef patty.

Blue Cheese Burgers with Brown Sugar Bacon and Chipotle Ketchup

8-10 slices bacon
2 tablespoons light brown sugar
1 pound lean ground beef
1/4 cup crumbled blue cheese
Salt and freshly ground black pepper
4 slices Swiss cheese
1/2 cup ketchup
1 tablespoon minced chipotle chilies in adobo sauce
4 hamburger buns
Spring greens (lettuces)
Sliced red onion
Sliced tomato

Preheat the oven to 400 degrees.
Arrange the bacon slices on a large baking sheet and sprinkle the brown sugar all over the top. Bake for 15 to 20 minutes, until the bacon is crisp. Drain on paper towels.
Meanwhile, combine the beef and blue cheese. Add salt and pepper to taste and shape the mixture into 4 patties.
Coat a stove-top grill pan or outdoor grill with cooking spray and preheat to medium-high. Cook the burgers on the hot pan for 4 minutes per side for medium-rare, or longer, until you reach the desired degree of doneness, adding the Swiss cheese for the last minute of cooking.
Combine the ketchup and chipotle chilies and mix well.
Arrange the spring greens on hamburger buns and top with the burgers, red onion, tomato, bacon, and ketchup mixture.
