Vegan Chocolate Cake!

Ok, as requested, here's my recipe for vegan chocolate cake! I added chocolate chips to the top, and then garnished with whipped cream. For a completely vegan version, use vegan chocolate chips and make the vegan frosting below. My recipe inspiration came from The View From the Great Island and this is her coconut frosting. 

Vegan Chocolate Cake

Cake:
Coconut oil for greasing pan
1 1/2 cups all-purpose flour
1 cup granulated sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
5 tablespoons coconut oil (the kind that is solid at room temperature)
1 tablespoon apple cider vinegar (I use the one with the "Mother" for health benefits)
1 tablespoon vanilla extract
1 tablespoon mini chocolate chips
Frosting:
3 tablespoons thick coconut cream
3 cups confectioners' sugar, or more as needed
Sweetened shredded coconut for garnish

Preheat the oven to 350 degrees. Coat an 8x8-inch baking pan with coconut oil.
In a large bowl, combine all the ingredients but the chocolate chips and whisk until smooth. Pour the batter into the prepared pan. Sprinkle the chocolate chips on top.


Bake for 25 minutes, until a wooden pick comes out clean. Cool on a wire rack.


To make the frosting, beat the sugar gradually into the coconut cream until it becomes a spreadable frosting. Spread the frosting on the cooled cake and top with the shredded coconut.

Makes one 8-inch cake (which I ate 1/2 of!)
