Whole Wheat Baguette with Smoked Turkey, Feta and Veggies

Talk about an amazing dinner or lunch! Cram all your favorite flavors into a crusty baguette and life is good. Very good!

Whole Wheat Baguette with Smoked Turkey, Feta and Veggies

2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 whole wheat baguette (I found one with sesame seeds on top - yum!)
1 cup shredded green cabbage
1 ripe tomato, thinly sliced 
8 ounces smoked turkey, sliced thick
1/2 cup shredded carrots
4-6 ounces feta, cut into slices
1 cup baby spinach leaves
Freshly ground black pepper

Whisk together the mayonnaise and mustard. Half the baguette crosswise. Spread the mayo-mustard mixture on one or both sides. Top the bottom half with the cabbage, tomato, turkey, carrots, feta, and spinach. Season with black pepper. Arrange second half of baguette on top.
