Such a simple recipe with LOADS of flavor from lemons, capers and a dash of sweet honey!
Roasted Lemon Chicken
Cooking spray
4 boneless, skinless chicken breast halves
Salt and freshly ground black pepper
2 lemons
1 tablespoon honey
1 teaspoon Dijon mustard
2 tablespoons drained capers
1 tablespoon each black and regular sesame seeds
2 tablespoons chopped fresh parsley
Preheat the oven to 400 degrees. Coat a shallow roasting pan with cooking spray.
Season the chicken with salt and pepper and arrange in the prepared pan.
Sliced one lemon crosswise into thin slices and arrange all around the chicken.
Squeeze the juice of the second lemon into a bowl and whisk in the honey and Dijon. Pour the mixture over the chicken. Top with the capers and sesame seeds.
Bake for 20 minutes, until the chicken is cooked through.
Top with the parsley before serving.
