Guacamole-Mozzarella Pockets

I made a huge batch of guacamole yesterday and needed to find a fun use for it! This is super simple and so fun! You can make it your entire meal, or serve it alongside pasta in a light red sauce. Thanks to frozen bread dough, you can make these any day... The flavors are great together: garlicky guacamole, creamy mozzarella and ripe tomato. Oh, and I love the nutty crunch of the sesame seeds on top!

Guacamole-Mozzarella Pockets 

Cooking spray
1 pound frozen bread dough, thawed according to package directions
1 cup prepared guacamole, or more if desired
4-6 ounces shredded mozzarella cheese
1 tomato, diced
1 large egg, lightly beaten
2 tablespoons sesame seeds

Preheat the oven to 375 degrees. Coat a large baking sheet with cooking spray.
Divide the dough into 8 equal pieces and roll out each piece into a 1/2-inch thick circle. Top each circle with the guacamole, cheese and tomato. Fold over the edges and pinch them together to seal.
Arrange the filled pockets on the prepared baking sheet, brush with the egg and sprinkle with the sesame seeds.
Bake for 15 minutes, until golden brown. Serve warm or room temperature.
