Quick Salami Canapes with Fresh Mozzarella and Tomato

By definition, a canape is "a small piece of bread or a cracker that has cheese, meat, fish, etc., on top of it; often served at a party". Why do we have to wait for a party to enjoy these fun little treats? In fact, open a can of soup to serve with them and you've got a fun dinner for tonight!

Salami Canapes with Fresh Mozzarella and Tomato

1 French baguette, cut crosswise into rounds (about 16 rounds for one baguette)
3 tablespoons prepared basil pesto or sundried tomato pesto
3 plum tomatoes, cut crosswise into thin rounds
8 ounces fresh mozzarella, cut into thin slices
1/2 pound thinly sliced salami or deli ham
Olives, any variety, as long as they're pitted!

1 English (seedless) cucumber, cut lengthwise into long, thin strips

Arrange the baguette slices on a flat surface. Spread the pesto all over the top of the bread and then top with with the sliced tomato ,mozzarella cheese, and folded salami or ham slices. Skewer one olive onto a plastic or wooden pick and then skewer on the cucumber slices, folding them back and forth accordion-style. Press the pick into the canape to hold everything together. 

Makes about 16 canapes, Serves 4
