Call this a unique lunch or colorful side dish, it doesn't matter to me! I just love how the colors play together. Oh, and the flavors... sweet beets, creamy avocado, smoky turkey, and tangy blue cheese. You'll adore how simple it is to assemble too. If you want to switch things up, use leftover roasted or rotisserie chicken instead of turkey, roasted sweet potatoes instead of beets, and grilled asparagus instead of avocado. Get creative with what you already have in your pantry and fridge!
Beet and Smoked Turkey Salad with Avocado and Blue Cheese
1 1/2 cups sliced jarred or canned beets (not pickled)
2 ripe avocados, pitted and diced
1/2 pound smoked turkey (or ham), cut thick and then diced
1/2 cup Greek yogurt
2 tablespoons crumbled blue cheese
1/8 teaspoon freshly ground black pepper
Fresh dill
Arrange the beets the bottom of four glasses. Top with the avocado and turkey.
In a small bowl, combine the yogurt, blue cheese and pepper and mix well. Spoon the yogurt mixture over the turkey. Garnish with dill. Serve to happy people.
