What a great holiday! Tortilla chips are always in my pantry - and not just for dunking in fresh salsa and guacamole. I use them as a crunchy topping over my soups, stews and chilies and as a crusting for my baked chicken. Here's a quick and easy recipe for fresh salsa to serve with those awesome chips!
Fresh Tomato Salsa
2 cups chopped fresh tomatoes
2 tablespoons minced white onion
2-3 tablespoons chopped fresh cilantro
1 clove garlic, minced
1 tablespoon fresh lime juice
1/2 teaspoon ground cumin
Salt and freshly ground black pepper
Combine all ingredients in a medium bowl and toss to combine. Serve with tortilla chips!
