I'll enjoy a brownie pretty much any day, but today it's official!
Easy Chocolate Brownies
Cooking spray or butter for greasing the pan
4 large eggs
1 cup granulated sugar
1 cup light brown sugar
8 ounces butter (2 sticks), melted
1 1/4 cups cocoa powder, sifted
3/4 cup all-purpose flour, sifted
1 tablespoon vanilla extract
1/2 teaspoon salt
Preheat the oven to 300 degrees. Coat an 8-inch square baking
pan generously with cooking spray or butter.
In a large mixing bowl, beat the eggs on medium speed until fluffy
and pale yellow. Add both sugars and mix well. Gradually beat in the melted butter
and remaining ingredients.
Transfer the batter to the prepared pan and smooth the
surface. Bake for 40 to 45 minutes, until a wooden pick comes out with little
crumbs clinging to it. Cool on a wire rack.
Cut into squares and serve.
Makes 16 brownies
