The perfect dish for meatless Monday. Not going meatless? Add chicken, smoked salmon, shrimp, or crab (see my additional filling ideas below). Have fun with this recipe - you can add anything you want! Also, serve the wrappers with horseradish and curry paste on the side for dunking.
Vegetable Spring Rolls with Wasabi Mayo
8 spring roll wrappers
1/4 cup mayonnaise
1-2 teaspoons wasabi paste
1 cup shredded Romaine lettuce
1/2 cup shredded carrots
1/2 cup shredded or finely julienned cucumber
Additional filling ideas:
Steamed shrimp
Crab or imitation crab sticks
Shredded chicken
Smoked salmon
Shredded red cabbage
Kimchi
Water chestnuts
Baby corn
Chinese mushrooms (sold in cans)
Bamboo shoots
Bean sprouts
Soften the spring roll wrappers according to the package directions.
Whisk together the mayonnaise and wasabi paste.
Arrange the spring rolls on a flat surface and spread the wasabi mayo all over the wrappers. Top with the vegetables and desired fillings.
Roll up the wrappers halfway, fold in the ends and roll up completely.
