I can't think of a better recipe for a hot summer night! I use smoked salmon in this recipe but it's also great with leftover grilled salmon filets and steaks.
Spicy Salmon Salad
1/4 cup good-quality olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon finely grated lemon zest
1 tablespoon sriracha sauce
1 teaspoon honey
Salt and freshly ground black pepper
4 cups shredded or chopped Romaine lettuce
1 cup diced beefsteak or Roma tomatoes
1 small red bell pepper, seeded and diced
2 cups diced smoked salmon
1/2 cup thinly sliced red onion
In a small bowl, whisk together the oil, lemon juice, lemon zest, sriracha sauce, and honey. Season to taste with salt and pepper. Spoon a small amount of the mixture onto 4 salad plates and spread out with the back of a spoon.
Top with the lettuce, tomatoes, red pepper, salmon, and onion. Drizzle remaining dressing over top.
