This is a super easy salad to make - and the presentation is fabulous! You can find banana chips in the produce section of most grocery stores, or in the bulk bins, or next to the raisins. They're super versatile and go way beyond snacking!
5 Ingredient Chicken Salad with Coconut and Banana Chips
Serves 4
Prep time: 10-15 minutes
4 cups shredded or cubed cooked chicken (such as rotisserie chicken or leftover roasted or grilled chicken)
1/3 cup light mayonnaise
1/4 cup light coconut milk
1/2 cup banana chips (often sold in the produce section of the grocery store)
2 tablespoons chopped fresh cilantro
Combine the chicken, mayonnaise and coconut milk in a large bowl and toss to combine. Fold in the banana chips and cilantro. Season to taste with salt and freshly ground black pepper.
