Kick off your weekend with this spicy fried rice! Add chicken, shrimp, pork, or scrambled eggs, and clean out your veggie drawer to make it your own. For me, I wanted to use up some tomatoes, water chestnuts, and chipotle chilies. It's completely non-traditional, but awesome. For you, it might be broccoli and corn. Anything works with fried rice.
Fried Rice
Sometimes, right before serving, I'll fold in 1 tablespoon of unsalted butter - just like they do at Benihana. :-)
1 tablespoon vegetable oil
1/2 cup minced white onion
2 cloves garlic, minced
3 tablespoons minced chipotle chilies in adobo sauce
1 cup diced tomatoes
2 cups cooked white rice
1/2 cup sliced water chestnuts
2-3 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons chopped fresh cilantro
Salt and freshly ground black pepper
Heat the oil in a large skillet or wok over medium-high heat. Add the onion and garlic and cook 2 minutes. Add the chipotle chilies and stir to coat. Add the tomatoes and bring to a simmer. Cook 1 minute, until the tomatoes break down. Add the rice, water chestnuts, soy sauce, and sesame oil. Cook 1 minute to heat through, adding more soy sauce or a tablespoon of water to keep the rice moist if necessary, stirring constantly. Remove the pan from the heat and fold in the cilantro.
Serves 4
