Serve this as an appetizer before dinner and/or a snack with cocktails! The creamy guacamole pairs perfectly with smoky salmon, tart lemon and fresh chives. There;s no real "recipe" here - it's a simply assembly-style dish! If you can't find the pumpernickel squares, simply cut pumpernickel bread slices into 3-inch squares and toast in a 400 degree oven for about 5 minutes.
Smoked Salmon Bites with Guacamole, Lemon and Scallions
1 package pumpernickel squares (often sold near the deli counter)
1 cup prepared guacamole (I like to buy mine as take-out from my favorite Mexican restaurant)
5 ounces smoked salmon
2-3 fresh scallions/green onions, chopped
1 lemon, juice and zest
Arrange the pumpernickel squares on a flat surface. Top each square with a spoonful of guacamole and a piece of smoked salmon. Top with scallions, freshly grated lemon zest and a squeeze of fresh lemon juice. Serve.
