Curried Chicken Burgers with Pickled Jalapenos

Let's fire up the grill (or grill pan) and get some curried chicken burgers going! The hint of curry adds great flavor to otherwise mild chicken. The kick of pickled jalapenos is super awesome too. Make the burgers as spicy as you like - choose hot curry paste and hot jalapenos for more heat, and mild curry paste and mild minced green chilies (sold in little cans) for a sweeter burger.

Curried Chicken Burgers with Pickled Jalapeno Peppers

Cooking spray
1 pound ground chicken
1/3 cup panko bread crumbs
3 tablespoons yellow curry paste, mild or hot
2 tablespoons minced pickled jalapeno peppers
2 tablespoons chopped fresh cilantro
1 large egg, whisked
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 sesame seed buns

Coat an outdoor grill or stove-top grill pan with cooking spray and preheat to medium-high.
In a large bowl, combine the chicken, bread crumbs, curry paste, jalapeno peppers, cilantro, egg, salt, and pepper. Mix until well blended. Shape the mixture into 4 equal patties (or 8 sliders), each about 1 1/2-inches thick.
Place the burgers on the hot grill or grill pan and cook for 3 to 5 minutes per side, until cooked through.
Serve on toasted sesame seed buns.
