HAPPY NATIONAL FUDGE DAY!



I'm a little curious why National Fudge Day is in June. It seems like an odd month - you know, it's hot. Fudge melts in your hands. Maybe it's because I live in Arizona and it's going up to 111 today. I suppose a nice piece of cold fudge would be the perfect remedy! Or ice cream with chunks of fudge woven in... you get my drift!

I have a fabulous recipe for dark chocolate fudge with dried cherries. We love bittersweet chocolate in our house, and the combination of that with sweet cherries is perfect. Here's how to do it (if you want fudge WITHOUT cherries, as pictured above, simply leave them out; you can also leave out the bittersweet chocolate and the fudge is still divine):

Bittersweet Fudge with Dried Cherries

18 ounces semi-sweet chocolate chips or chunks
14-ounce can sweetened condensed milk
1 teaspoon vanilla extract
1 cup bittersweet chocolate chunks
1/2 cup dried cherries

Line an 8-inch square baking pan with parchment or wax paper.
Melt the semi-sweet chocolate in the microwave, double boiler or bowl over a saucepan of simmering water. Stir in the condensed milk and vanilla until well blended. Fold in the bittersweet chocolate chunks and cherries.
Press the mixture into the prepared pan and smooth the surface. Cover with plastic and refrigerate until firm.
Cut the fudge into 24 squares and store in an airtight container in the refrigerator until ready to serve.

Makes 24 pieces
