It's the beginning of Teacher Appreciation Week tomorrow so I decided to make a huge batch of coconut macaroons with a semi-sweet chocolate drizzle. There are also two teachers who LOVE chocolate, especially Milky Way candy bars, so hence the chocolate roses in a vase of Milky Ways! The recipe for the cookies is below!

cup fat-free sweetened condensed milk
1
large egg white
2
teaspoons vanilla extract
Pinch
of salt

1/2 cups shredded sweetened coconut (14-ounce bag)
1/2 cup semi-sweet chocolate morsels
Preheat
the oven to 325ºF. Line two baking
sheets with parchment paper. Set aside.
Whisk
together the condensed milk, egg white, vanilla, and salt. Fold in the coconut until well blended. Drop the dough by tablespoonfuls onto the
prepared pans, about 2 inches apart. Bake
for 20 minutes, until golden brown. Cool
the pans on racks until the macaroons cool completely.
Melt the chocolate in the microwave in 20 second intervals, stirring after every 20 seconds. Using a fork, drizzle the chocolate over the cooled cookies. Cool completely before packaging.
Makes 24 cookies
