Greek Salad Wraps!


These Greek-inspired wraps will have you dancing in the streets today!

Greek Salad Wraps

1 cup diced fresh tomatoes
1 red bell pepper, seeded and sliced
1 cup diced English cucumber
1/2 cup sliced red onion
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon oregano
1/4 cup crumbled feta cheese, regular or herbed
Salt and freshly ground black pepper
4 flour tortillas

In a large bowl, combine the tomatoes, bell pepper, cucumber, and onion. Toss to combine.
In a small bowl, whisk together the oil, vinegar and oregano. Add to vegetables and toss to combine. Fold in the feta cheese. Season to taste with salt and pepper.
Spoon the mixture into the flour tortillas and serve.
