One of my favorite recipes from The Newlywed Cookbook!
Super Moist Banana Bread
Cooking spray
2 cups all-purpose flour
3⁄4 cup granulated sugar
2 teaspoons baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
4 large over-ripe bananas
1⁄4 cup milk
1 large egg
1
teaspoon vanilla extract
Preheat oven to 350˚F. Coat an 8-inch loaf pan with cooking
spray.
In a medium bowl, combine the flour, sugar, baking powder, baking
soda, and salt. Mix well with a fork and set aside.
In a large bowl or food processor fitted with the metal blade,
mash the bananas until mushy. Add the milk, egg, and vanilla and mix or process
until blended.
Add the dry ingredients to banana mixture and mix or process until
just blended. Pour the batter the prepared pan and bake for 50-60 minutes, or
until a wooden pick inserted near the center comes out with little bits of
banana bread clinging to it.
Cool in pan, on a wire rack, for 10 minutes. Remove the bread from
the pan and cool completely.
