For my many friends celebrating Rosh Hashanah, I wanted to share this awesome side dish recipe. My goal was to include ingredients that are customary for the celebration - apples, honey - while creating a dish that will dazzle your family. I hope you love it.
Pomegranate-Spiked Cole Slaw
16-ounce bag shredded green cabbage
1 cup shredded carrots or shredded purple cabbage
1 Granny Smith apple, cored and julienned
(cut into matchsticks)
1/2 cup pomegranate seeds
2 scallions, sliced crosswise into
1/2-inch pieces
1/4 cup pomegranate juice
3 tablespoons grapeseed oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and freshly ground black pepper
In a large bowl, combine the cabbage carrots, apple,
pomegranate seeds, and scallions.Mix well and set aside.
In a small bowl, whisk together the pomegranate juice, oil, vinegar, honey, and mustard. Pour the dressing over the salad and
toss gently to combine.Season to taste with salt and pepper. Serves 6
