Not Your Average Nachos!
Meat Topping:
2 teaspoons vegetable oil
1/2 pound extra lean ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes, or more to taste
1 cup tomato sauce
Additional Toppings:
Shredded cheddar cheese
Pickled jalapeno pepers
Sliced red chile peppers
Diced tomatoes
Sliced black olives
Chopped fresh cilantro
Sour cream
Preheat the oven to 300 degrees.
Heat the oil in a large skillet over medium heat. Add the beef and cook until browned, breaking up the meat as it cooks. Add the chili powder, cumin, oregano, salt, and red pepper flakes and stir to coat. Cook 1 minute, until the spices are fragrant. Add the tomato sauce and bring to a simmer. Simmer for 5 minutes, until the liquid is reduced and the mixture is thick.
Meanwhile, spread corn tortilla chips out on a baking sheet. Cover with shredded cheddar cheese. Bake 5 to 10 minutes, until cheese melts. Top the cheesy chips with the meat mixture and desired toppings.Dig in!
